Crispy Baked Fries

This Recipe excites my two young boys. As we eat out on a very rare occasion. We never consider fast food chains as even a option.

This is a healthy spin on the American French Fries.

Crispy Baked French Fries:
6-8 organic Yukon gold potatoes (these have more flavor than russet potato)
4 Cups of cold water
1T Sea Salt
3-4T extra virgin olive oil
Preheat oven to convection roast 500- the oven should heat for 45 minutes to get the proper crispy crunch
Paper towels
Organic ketchup or homemade

If you have a mandolin slicer that is best. If not keep your slices close to the same size.
Once sliced add the cold water into a medium size bowl with potatoes
Let sit 45 minutes or longer

Strain after 45 minutes
Lay out on paper towels and pat off excess water
Add back to bowl and add olive oil. Mix with your hands and add to baking tray. Best to line with parchment so fries do not stick to your baking sheet.

These will roast for 30-40 minutes depending on how crispy you would like them.
After 15 minutes toss the fries so they cook evenly
Toss again in another 15 minutes and cook 10 minutes longer if you would like them more on the crispier side.

When complete remove from oven and toss your sea salt on the fries

Serve with homemade ketchup or organic ketchup
