This recipe was inspired by reading every mushroom soup (can & box) at that market.
Some of the ingredients I could not even pronounce…let alone when I googled them they were either chemicals or basically toxic fillers we should not even feed to our pets.
Yes, I know… Most rather turn a blind eye to our “processed foods” all the “poison” we allow and ignore. Our food guidelines in the USA are beyond reckless and dangerous. Other countries do not allow chemicals and toxins as fillers. We shouldn’t either.
It’s time to learn, educate and take it in to your own hands.
It is this simple. If you love yourself, your children, your family, friends, etc… Take the time to know what your putting in your/their bodies.

Cream of Mushroom Soup Recipe
1 organic yellow onion diced finely
2 T Extra Virgin Olive Oil
4-5 organic garlic cloves finely diced
5 finely diced celery stalks
5-6 cups of white button mushrooms -sliced organic if possible
1-2 cups of brown button mushrooms -organic & sliced
1/4 cup of organic fresh parsley-chopped finely
1/2 cup fresh organic thyme- chopped finely
2 T organic butter or organic earth butter
5-6 cups of organic vegetable broth (homemade if possible for the best flavors)
3 t cinnamon
1 T sea salt
1-2 t Himalayan Salt
Dash of cayenne
Directions:
Sauté onions on medium high with olive oil in stock pan-stirring occasionally
When the onions are translucent add garlic and sauté another 2-3 minutes
In a sauté pan melt butter on medium high and sauté mushrooms until al dente about 5 min
Remove from heat and stir in Himalayan salt
Add to stock pan with onions & garlic: vegetable broth, celery, thyme parsley, cayenne, cinnamon, sea salt
Bring to a boil and reduced to a simmer for 10-15 minutes
Add the mushrooms and simmer for another 10 minutes
Take two cups of the soup and purée in a blender
This adds a bit of creaminess to the soup with adding cream as most recipes call for
If not thick enough add to a cup 2T cold water & 1 T cornstarch mix until smooth and add to soup
