Healthier Caesar Salad Dressing Recipe

I have been making this dressing for a few years now.

I stopped buying pre-made dressing years ago…

After researching & several different attempts… I finally made one that is very delicious

 

Caesar Dressing Recipe

Ingredients:

3 Cups Greek Yogurt

1/2 Cup homemade Mayonnaise  or Earth Balance mindful Mayo- something clean non chemical -You can always leave out this ingredients and add 1/2 cup more of greek yogurt

1 large organic lemon freshly squeezed

1 1/2 tsp of sea salt

3-4 raw medium garlic cloves (start with 3 as raw garlic can get a bite and kick to it)

3 T Olive oil (cold press is always best)

1/2 cup of very good parmesan -buy it in the block form (Parmigiano-Reggiano), never pre shredded (it has added chemicals)

Method

In your blender add all ingredients except olive oil

Blend until puréed add olive oil and blend another minute

You can always adjust and add more salt, lemon and or parmesan to your liking

This can keep in your frig up to a week. Shake always prior to using

You can keep it basic, but a few added ingredients turn it into a meal.

Organic black beans

fresh cut tomatoes

Avocado- slices

Organic grilled chicken

Homemade croutons

Shaved parmesan throughout and great for garnish on top
